Paleo Zucchini Oatless Oatmeal

"Zucchini oatless oatmeal is a paleo twist on a classic bowl of morning oatmeal. Made with eggs, almond milk, zucchini, applesauce, flaxseed, and cinnamon, this simple bowl of goodness is packed with protein and fiber. A nutritious way to stay full all morning! Ingredients :

  • 3/4 cup unsweetened vanilla-flavored almond milk
  • 1 1/2 tablespoons ground flaxseed
  • 3 large egg whites
  • 1/2 cup unsweetened applesauce
  • 1/2 cup grated zucchini
  • 1/2 teaspoon ground cinnamon

Instructions :

  • Heat a saucepan over medium-low heat; add almond milk, ground flaxseed, and egg whites. Cook mixture, stirring constantly, until thickened, about 5 minutes.
  • Reduce heat to low and stir in applesauce, zucchini, and cinnamon. Cook and stir mixture until desired consistency is reached, 5 to 10 minutes more.
