Paleo Miracle-Whipped Dressing

"This is the perfect homemade Miracle Whip® copycat free of soy, gluten, and preservatives. This recipe makes a small batch because it will only keep for about a week in the refrigerator, and we don't use enough to need anymore than that at a time. It is easily doubled, if you need a larger batch. Made as directed, this recipe is paleo-diet friendly, soy-free, gluten-free, grain-free, corn-free, and dairy-free. Enjoy! Store in a sealed container in the refrigerator for up to 7 days."

Ingredients :

  • 1 egg
  • 3 tablespoons confectioners' sugar
  • 2 tablespoons distilled white vinegar
  • 1/4 teaspoon lemon juice
  • 3/8 teaspoon salt, or more to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dry mustard powder
  • 1/4 teaspoon ground paprika
  • 1 cup extra-virgin olive oil

Instructions :

  • Pour egg, confectioners' sugar, white vinegar, lemon juice, salt, garlic powder, mustard, and paprika into a blender; pulse until mixture is frothy.
  • Turn the blender on to low and slowly pour olive oil into egg mixture until dressing thickens and emulsifies.

Notes :

  • I use a Vitamix® blender for my dressing, but I am very careful not to blend at too high of a speed so I don't cook the egg. I like to wrap an athletic ice pack around the base of my blender container to help keep it cool.
